Baked Irish Parsnips

A traditional mains accompaniment from the Emerald Isle.

Baked parsnips make a regular appeance on the table in many Irish homes and eating establishments - so why not try this dish as a main meal accompaniment?

You will need: 2½lb parsnips
2oz butter - or bacon fat if you're a meat eater
3 tablespoons of stock
Salt & pepper
A pinch of nutmeg

The Method

Peel all the parsnips, quarter and then remove any woody core. Parboil them for about 15 minutes and then place them in an ovenproof dish. Add the stock and sprinkle with salt, pepper and nutmeg. Dot with butter and bake for 30 minutes on a low shelf in a moderate oven.

Generally parsnips are baked in the same oven as the main meat dish, whose cooking temperature governs that of the parsnips.

Simple and easy, your baked parsnips are ready to serve. If you're feeling a little adventurous, try popping cleaned garlic cloves - eight or nine should do for this amount of parsnips - onto the oven dish among the other ingredients about half way through the baking time.
