Goat's Cheese Rolls
Fill large wholemeal rolls with goat's cheese, walnut pieces, halved grapes and baby salad leaves.
Mozzarella Ciabatta
Cut a warm piece of ciabatta or large ciabatta rolls in half and fill with slices of mozzarella cheese, prosciutto and plumb tomatoes. Drizzle with a little olive oil, and add some pinenuts and torn basil leaves.
Pitta With Hummous
Split pittas, to make pockets, and fill with hummus, roast pepper slices and baby spinach leaves.
Avocado Wrap
Fill wheat tortillas with avocado mashed with garlic and a little mayonnaise, strips of smoked ham, thinly sliced pepper, red onion and crisp lettuce.
Croissant With Brie
Fill a croissant with slices of blue brie, and ripe pear, or brie and crispy bacon.
Coriander Salmon In White Bread
Fill white bread slices with watercress and mixture of cooked salmon, chopped fresh coriander, lime juice, garlic, chopped spring onion, a little mayonnaise and black pepper.
Smoked Mackerel Bagel
Cut bagels in half and spread with a mixture of cream cheese and chives. Mix some smoked mackerel with lemon juice, double cream and some horseradish, place on top of the cheese mixture.
Rye Bread (open sandwich)
Try thick slices of rye bread filled with cottage cheese, pastrami and gherkins.
