Mexican Style Burritos

A delicious variation on the taste of that magical land south of the (US) border: Mexican style burritos.
You will need: 1 can (16 oz) fat-free refried beans
1/3 cup salsa or water
4 9-inch soft flour tortillas
1 medium tomato, chopped
4 small green onions, chopped
1/2 green pepper, chopped
1 cup reduced-fat shredded
Mozzarella cheese
Shredded lettuce
Salsa or taco sauce, as desired
Low fat sour cream or low fat plain yoghurt (optional)
The Method
Combine the beans and salsa or water and mix well. Spread about 1/3 cup of the bean mixture thinly over each tortilla, leaving a 1-inch border. Sprinkle the tomato, green onions, green pepper and half the cheese over the tortillas. Roll each tortilla and place, seam side down, in a lightly greased baking dish. Bake in a 400-degree oven for 10 minutes.
Sprinkle with the remaining cheese and bake for 5 minutes longer or until heated through and the cheese melts. (Or cover with waxed paper and microwave on med-high (70%) power for 2 to 4 minutes or until heated through.)
Serve the burritos on shredded lettuce. Serve the salsa or taco sauce and sour cream or yoghurt separately. Add them to the burrito as required. If you've got some chilli and curry addicts to feed, why not try serving this dish up with a side order of chopped jalapeno peppers, for that extra bit of spice!
