Quick Chocolate Cake

If you like chocolate cake, but are short of time, then our recipe for 'Quick' Chocolate Cake' is a must. A mouthwatering chocolate desert for you to gorge on!

You will need: 4 oz unsweetened baking chocolate, broken into pieces
¼ cup butter or margarine
1¾ cups boiling water
2¼ cups all-purpose flour
2 cups sugar
½ cup dairy sour cream
2 eggs
2 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract

Method

Heat your oven to 350°F. Grease and flour 13"x9"x2" baking pan. In a large mixing bowl, combine the chocolate, butter and water using a spoon and stir until the chocolate is melted and the mixture is smooth. Add the flour, sugar, sour cream, eggs, baking soda, salt and vanilla and beat on low speed of electric mixer, or gently by hand, until smooth. Pour this batter into the prepared pan. Bake for 35 to 40 minutes or until wooden toothpick inserted in centre comes out clean. Cool it completely in the pan on a wire rack.
