Chocolate Meringue Cookies

A chocolate meringue treat for small - and not so small - cookie monsters.

You will need: 1/2 cup egg whites (from about 4 'large' free range eggs)
A pinch of salt (substitute a low, or no sodium alternative if you're watching your own or your dinners' blood pressure)
1 cup sugar
1 tablespoon sifted unsweetened cocoa powder

Method

Preheat the oven to 300°F. Line two cookie sheets with parchment or wax paper.

With an electric mixer, beat the egg whites and salt on high speed until soft peaks form. Continue mixing on high speed while adding 1/2 cup of the sugar. Add the remaining sugar by the tablespoon. Beat for another 1-2 minutes, until the mixture is stiff and shiny. Gently fold in the cocoa powder until just combined.

Drop by the spoonful onto the cookie sheets. Flatten each cookie slightly with the back of a spoon. Bake until meringues are firm and lightly browned, about 30 minutes. Let cool.

Serve with a glass of whole milk for that perfect post school/after work/post cookie baking snack. The good news (apart from the plate of tasty cookies in front of you!) is that each of these cookie is only 25 calories and has virtually NO fat!
